The palate is smooth, full of dark, macerated fruit, with a lingering finish.
This tremendous cuvee is born in Languedoc-Roussillon, South of France. Granfort Chardonnay comes from a selection of the best parcels in the area, made by head winemaker Xavier Roger. The grapes are harvested at full ripeness after many tasting of the grapes and chemical analysis. The grapes undergo a short skin-contact maceration.
After pressing and off-settling, the juice ferments at low temperature. The fermentation is very slow and can last sometimes up to one month. The wine is aged on fine lees in order to give the palate a round smoothness.
